I love springtime in the South! Watching the trees bud, flowers bloom and my garden sprout are some of the season’s highlights. Even our chickens are glad for spring. We all enjoy hearing their contented clucks as they forage around the house, relishing the warmer days.
One of the main benefits of having chickens is the fresh eggs they produce. I created this egg salad recipe and love using our home-grown eggs in it. It’s a great dish for picnics, showers, Easter, family get-togethers or any occasion, really.

Ingredients
2 doz. Holtkamp eggs (hard boiled)
¾ cup salad dressing (or so)
2 T. Dijon mustard (or so)
2 T. chopped sweet onion (or so)
1 T. dried dill or 2 T. fresh dill
¼ c. chopped sweet gherkins
½ t. kosher or sea salt
Pepper to taste
Dash (or two!) of Holtkamp Heatwave Hot Sauce, or your favorite hot sauce
Lettuce and tomato to garnish if preferred
Directions
1) Hard boil eggs. Peel, clean, wash.
2) Separate yolks and whites. Smash yolks in bowl. Chop whites into separate bowl.
3) Combine salad dressing, mustard, onion, dill, gherkins, salt, and hot sauce (if using) with smashed yolks. Mix well. No tasting…YET!
4) Combine yolks and whites gently. Taste – now. Pepper if like.
Serve on toasted sour dough or baguettes. Lettuce and tomato if preferred. Watch it disappear!
