1 large sweet onion, diced
2 cloves garlic, minced
1 15 oz can fire roasted tomatoes (with juice)
4 cups chicken stock
1 1/2 cups BBQ Sauce
2 tbsp Worcestershire sauce
1 tbsp light brown sugar
2-3 dashes Holtkamp Heat Wave Hot Sauce (or more!)
1 1/2 lb smoked pulled pork
1/2 lb roasted or smoked pulled chicken
8 oz frozen corn kernels
8 oz frozen baby lime beans
kosher salt and fresh ground pepper
Directions
Melt butter in dutch oven or large pot over medium heat until foamy. Add the onions and a pinch of salt and saute until soft, about 4 minutes. Add the garlic and stir for another minute.
Stir in the tomatoes, chicken stock, barbecue sauce, Worcestershire sauce, brown sugar, hot sauce, pork, chicken, lima beans, corn and a big pinch of salt and pepper.
Bring the mix to a boil, then cover and simmer for about 1.5 hours over low heat, stirring occasionally, until thick and stewy. Taste for seasoning, if needed, before serving.
Ladle this delicious Brunswick Stew into a bowl and serve with saltine crackers or cornbread, plus more hot sauce for those who want an extra kick!
